One of the first things we’re asked when we say we eat a ketogenic diet is.
Where do you get all your vitaminsand fiber from?
From vegetables of course and making delicious high fat and creative keto vegetable recipes.

Nutritious Keto Vegetable Recipe Super Foods

  1. Broccoli – Is loaded with essentialVitamins, K, C, chromium, folate and awhole lot more essential vitamins and minerals and its pack with fiber. Broccoli is also ideal for a lazy thyroid.
  2. Cauliflower – Is also a high source of Vitamin K and C and a heap of others including important fiber. We use it as an excellent rice replacement.
  3. Spinach – Popeye wasn’t wrong, Spinach is one vegetable that everybody should get into their diet (unless they have some sort of medical condition, allergy, etc.).
  4. Cabbage – “poor man’s lettuce?” Hardly! Cabbage is also a very filling fibrous and nutritiousketogenic vegetable. Cheap and healthy, if you want a vegetable to add without risk of going out of ketosis, keep cabbage on hand.

Ingredients

  • 2 heads Broccoli
  • 1/2 cup frozen spinach defrosted and drained well
  • 1/4 cup Scallions sliced
  • 1 Lemon Zest only
  • 1 cup Cheddar Cheese grated
  • 1/4 cup Parmesan cheese grated
  • 2 eggs
  • 1/3 cup Sour Cream
  • 1/2 teaspoon Pepper
  • 1/4 teaspoon Salt

Instructions

  • Preheat oven to 180C/355F.

  • Cut broccoli into evenly sized florets and place in a microwave safe container with ¼ cup of water. Microwave on high for 3 minutes or until the broccoli is tender. Drain well and allow to cool.

  • Chop the broccoli into very small pieces, You should end up with approximately 2-2 ½ cups.

  • Place the chopped broccoli in a bowl with all the remaining ingredients and mix well.

  • Pour the mixture into a 11 x 7in rectangle brownie pan, lined with parchment paper, and smooth into an even layer.

  • Bake for 25 minutes, until the bites are puffed and browning.

  • Allow to cool for 10 minutes, before cutting into 24 squares.
