Chicken is pretty universally loved. But it’s so easy to end up with bland, dry meat.

Luckily, that’s not the case anymore, thanks to these sous vide chicken breast recipes.

From dry rubs to marinades, a sous vide machine can handle it all.

Better still, it doesn’t need babysitting. So like Crockpot chicken breast recipes, you can get on with your day while the meat cooks!

What Is a Sous Vide?

A sous vide machine cooks vacuum-packed meats, veggies, and seafood immersed in water set to a specific temperature.

Meaning “under vacuum” in French, sous vide cooking is the process while a sous vide machine or appliance heats and circulates the water, keeping it at a set temperature.

Some sous vide (pronounced sue-veed) machines are units, kind of like mini deep fryers. They hold a small “tank” of water in which you cook the food.

Other types of sous vide machines are known as immersion circulators. They look more like immersion blenders and hook on the side of pots or water baths.

They, too, heat and circulate the water so the meats cook at an even temperature.

This is the most common type you’ll see in non-professional kitchens. They work very well and are inexpensive.

The only downside to immersion circulators is that you often need to weigh down the bag. It must be fully submerged to cook properly.

When cooked at the perfect temperature, the chicken is super tender and juicy.

I highly recommend the sear at the end, but it’s optional and delicious either way.

2. Sous Vide Chicken Breasts with Herb Butter

This recipe is a fantastic way to start your sous vide journey. It’s easy and leaves a lot of room for customization.

Seal the chicken with salt, pepper, fresh herbs, and lemon, then cook for an hour or two.

Feel free to add more herbs or spices if you like. But a lot of the added flavor comes from the compound butter, anyway.

3. Sous Vide Chicken Breast (Garlic Butter)

Did somebody say garlic butter? Obviously, I’m in!

This chicken will blow your mind in more ways than one. It’s easy to make, includes simple ingredients, and is irresistibly good.

Seal the chicken with butter, garlic, salt, pepper, and fresh herbs. Then let the water do its thing.

The butter and herbs soak into the chicken, making every bite better than the last.

4. Sous Vide BBQ Chicken

How many times have you prepped chicken for the grill and overcooked it? I know I do it at least once per summer, and it’s a bummer every time.

But with this recipe, you take all the guesswork out of it!

Pre-cook the chicken to juicy perfection in the sous vide, then finish it on the grill for a kick of smoky char.

Easy peasy.

5. Sous Vide Chicken Breast with Cilantro Lime Avocado Salad

Sous vide chicken breast with cilantro, lime, and avocado salad is the ultimate summer lunch recipe.

Juicy chicken with a cool and refreshing mix of creamy avocado and zesty lime is always a hit.

Want to make this even more delish? Add a glug of tequila, some lime juice, and a couple of orange peels in with the chicken!

6. Chicken Marsala Sous Vide

Chicken Marsala sous vide is a terrific date night or dinner party meal.

Set the meat to cook a couple of hours before you plan to eat. Then forget it and prep everything else while it swims in the water.

The sauce here won’t take more than 5-10 minutes to whip up, leaving you a solid hour and a half to set the table and make a tasty dessert!

7. Sous Vide Teriyaki Chicken

Skip the take-out tonight and make this easy sous vide teriyaki chicken instead!

You’ll marinate the meat in a mix of soy sauce, sugar, rice vinegar, minced garlic, and oil.

That also becomes the sauce once the chicken is done cooking! Just pour it into a skillet and cook until it’s thick and glossy.

Add the chicken, toss to coat, and serve with steamed rice. Yum!

8. Indian Butter Chicken

Butter chicken is a hugely popular dish that’s packed with flavor.

The rich, creamy sauce is made with tomatoes, onions, cream, garlic, and of course, butter.

The acidity from the tomatoes keeps it from being overly rich, and the chicken brings just the right amount of meaty goodness.

Serve with rice, naan, and plenty of chutney!

9. Sous Vide Buttermilk Fried Chicken

I know what you’re thinking: fried chicken in a sous vide?

But, like the BBQ chicken recipe above, it makes total sense when you think about it.

After all, what’s the biggest fear of making fried chicken? Having a dark brown, almost burned coating and a raw center.

But if you pre-cook the chicken in a sous vide, you’ll never have to worry about pink chicken again!

10. Sous Vide Lemon Chicken Breasts Over Pasta

This sous vide lemon chicken and pasta is a must-make this summer.

It’s an Italian-inspired dish with tons of flavor, including citrus and plenty of salt from the capers.

It’s bright, light, and ideal for balmy nights in July.

11. Sous Vide Shredded Chicken Breast

This recipe is a fantastic base for shredded chicken. It’s mild and pairs well with pretty much everything.

Though you can jazz it up any way you like. So feel free to add heat, citrus, or a bunch of extra herbs.

Either way, it’ll be juicy and fork-tender in about an hour.

12. Sous Vide Chicken Parmesan

Your trusty sous vide is the best way to get perfect chicken Parmesan every time.

Again, you’ll cook the chicken first, ensuring it’s tender and juicy. Then add the coating and briefly fry it until it’s crispy.

This is my go-to recipe when using thick chicken breasts. Because nobody wants a burned crust, right?

13. Grilled Rosemary Dijon Chicken

Grilled rosemary and dijon chicken is a fantastic dish that will leave you satisfied.

Marinate the chicken in a blend of white wine, vinegar, mustard, Worcestershire sauce, and garlic for 4-24 hours.

Then cook it in the sous vide for a couple of hours. Finally, grill it for a couple of minutes on either side and serve!

14. Sous Vide Curried Chicken Salad

Looking for a fun twist on your usual chicken salad recipe? Try this curry recipe!

It’s kind of like coronation chicken in terms of the fruit chutney and curry powder.

But you’ll also add crisp veggies, juicy grapes, and crunchy pecans. Wow!

15. Sous Vide Chicken Kebabs with Soy, Ginger, Honey, & Lime

Give your next summer party a huge upgrade and make a big batch of these chicken kebabs.

Every bite is impossibly tender and fully loaded with flavor, thanks to the mix of soy, ginger, honey, and lime sauce.

The spicy-sweet balance is insanely good. And the char on the chicken is uber delicious.

16. Sous Vide Tomato Pesto Chicken

Make this sous vide tomato pesto chicken once, and you’ll crave it all the time.

The chicken is cooked with pesto, sour cream, sun-dried tomatoes, and more. Then the marinade is repurposed into an incredible sauce.

If you need a good comfort meal or an impressive dish for a dinner party, this is it.

17. Garlic Herb Sous Vide Chicken Breast

Garlic herb sous vide chicken breast is terrific for any night of the week.

This chicken breast is made with simple spices and loads of flavor. Plus, it’s super juicy and tender.

Serve it with your favorite sides for an easy and tasty meal the whole family will love.

18. Sous Vide Ham and Cheddar Stuffed Chicken

If you’ve never made stuffed chicken breast before, start here.

It’s another one of those dishes I always worry isn’t cooked in the middle. So let’s make sure and use the sous vide!

All the prep work is done before cooking. You’ll cut a nice pocket and stuff it with cheese and ham.

Then it cooks as one in a sealed bag, so all that cheesy, salty flavor has nowhere to go but into the chicken.

19. Sous Vide Chicken Breast with Mushroom Sauce

Sous vide chicken breasts with mushroom sauce will become a weekly favorite.

It starts out as a simple sous vide chicken. But it’s topped with a creamy, earthy mushroom sauce that’s to die for.

It’s also quick and easy to throw together once the chicken is cooked.

So, you could even prep the chicken a day or two ahead and just whip up the sauce on a busy weeknight.

20. Sous Vide Cajun Chicken Breast

Cajun chicken breasts are just as spicy and tasty as they sound.

And you’ll let the chicken sit in the spices, too, infusing every mouthful with incredible flavor.
