I have been on low carb diet for more than a year now and I have seen amazing results. So I am in this for my lifetime. Getting rid of carbs in the diet was not very easy at the beginning. But as days went by, I found out how to tweak recipes to make them low carb. To share it with you all, I have created a new channel – Indian Low Carb Recipes in YouTube. This month’s Bread Baker’s challenge is all about Pancakes around the world. I wanted to try these yum Danish pancakes since a long time and so I tried it with coconut flour to make it low carb. I also used erythritol as the sweetener as it is zero cal and perfect for my ongoing diet. Erythritol is mildly sweet and so if you love your pancakes sweet, then increase the amount. After using coconut flour for more than a month, I found that even a table spoon of it makes a decent portioned meal. It is highly absorbent and so if you are substituting it for APF, then for a cup of flour, you need only 1/3 cup of coconut flour. You can get both erythritol and coconut flour on Amazon. I will give the links for those.
The pan you need to make these pancakes is a special pan. It is so much like our paniyaram pan and so I didn’t have any problem. These pancakes tastes so much like the sweet paniyaram we make in Southern part of India. Next time I will be adding some grated coconut and nuts to the batter to make it more like our traditional paniyaram. Never feel worried that you can’t eat tasty when on diet. It is a myth. I make sure that I make varieties of food but just with all the restrictions in mind to make dieting fun.
Makes 13 – 14 pancakes
Ingredients:
Eggs – 3
Erythritol – 1 1/2 tbs
Melted Butter – 20 gm
Milk – 1 tbs
Coconut Flour – 2 tbs
Baking Powder – 1/2 tsp
Procedure:
In a bowl beat together eggs and erythritol for 2-3 minutes or until double in volume.
Add melted butter and milk and beat to combine.
Finally add coconut flour and baking powder and beat until a tsmooth batter is formed.
Heat a paniyaram pan / aebleskiver pan. Grease the moulds.
Fill the moulds with batter and cook on medium flame until the bottom is cooked.
With the help of a skewer, flip the pancakes carefully.
Cook for a minute or two.
Remove them from the pan and serve them hot.
