With 15 years of Hungry Girl recipes, it’s hard to choose! But there are a few that really stand out… ones I make ALL the time. So without any further ado, here are five of my favorites!
The Egg Mug Classic

I’ll never forget the first time I realized I could make an egg scramble in the microwave -- life-changing! Just grab some egg whites or egg substitute, a wedge of Laughing Cow (or light cream cheese), and a LARGE microwaveable mug. Mix it, microwave it, and you’ve got breakfast in 5 minutes or less! This mealis a staple on the Hungry Girl Diet, and with good reason... You get a HUGE and satisfying serving for less than 350 calories! It’s super easy to make and tastes just like the iconic sandwich. If I don’t have all the ingredients on hand, I’ll make a simplified version with broccoli cole slaw, tomato sauce, extra-lean ground beef, and seasonings. Mmmmm!
Mac Attack Burger Bowl

I love a good fast-food fix, and this supersized bowl is the definition of a better-for-you burger swap. I whipped up my version of McDonald’s special sauce, and replaced the carby bun with shredded lettuce. It’s everything I love about a burger with less than half the fat & carbs of a Big Mac. Ditch the drive thru, and dig in!
Pizza-fied Chicken

One of my cooking philosophies: You can make ANYTHING taste like pizza if you top it with tomato sauce, mozzarella, and pepperoni! Here chicken breast acts as the pizza crust. This is basically the low-carb, high-protein pizza of my dreams. Speaking of low-carb recipes inspired by pizza, these Pizza-bellas made with portabella mushrooms also rank highly on my list!
Naked Chicken & Eggplant Parm

Perfectly cooked eggplant paired with flavorful tomato sauce is one of my all-time favorite combinations, and this 5-ingredient casserole is a ridiculously delicious way to enjoy it.
