Therali Appam Recipe is a sweet snack recipe made using fresh Bay Leaf. The word Therali in this recipe means Bay Leaf. This recipe is very famous in Kerala and is usually made as an offering to some of the deities during Puja.

“I told you I can’t talk to you now. Just get back to your room and sit quietly”.

Poor little girl, sobbing, went back to her room quietly, thinking about, what did she do even.

And since then, she has never come back and shared even the smallest things in her life with her parents.

Why?

Because she was scared of her parents, she was scared that if she asked something or, shared anything with them, it could make them angry.

Which, she probably can’t take anymore.

This was the story of my friend, who complained that her daughter doesn’t share anything with her nowadays.

Suddenly, my ear started buzzing with a question from my neighbor, just a few days back.

The question was…

Are you a Friend or a Mother to your daughter?

This question shook me literally. And I am still not able to find an answer to his question.

And now today when my friend shared her story I could relate something very similar to my life as well.

Though I keep telling my daughter to share everything with us and we claim that we are a friend to her more than a parent.

But now, even I am not sure if I am a friend to my daughter.

Because knowingly or unknowingly we also make the same mistake. We tend to get angry at her without any reason. And after some time we realize that we shouldn’t have done this.

But after meeting my friend and hearing her story, I made a decision.

I decided that I would change myself and try my level best, not to lose control and use her as a punching bag, whenever I am frustrated and irritated by something or somebody else (isn’t this something all of us do)

Why I am sharing all this?

There is so much child abuse happening these days and our children must trust us with anything in their life and share every little thing in their day-to-day life.

And this is only possible if they feel comfortable sharing it with us.

And for that to happen we need to instill confidence in them.

While we all claim to be friends with our kids, we very conveniently change into a parental form (monstrous) at our convenience.

We need to stop that and be a real friend to our kids. Then only we will be able to build a healthy relationship with them.

Controlled reprimanding, empathetic counseling, and friendly conversation can replace scolding and shouting.

And most of all when we are frustrated and irritated, we should stop using our children as a punching bag.

If you are not doing that great, but if you are doing it then please stop.

About Therali Appam Recipe:

Therali Appam is an authentic Traditional snack recipe prepared in Kerala using fresh Bay leaves. The aroma of bay leaves gets blended with the batter which makes this recipe unique.

This recipe can also be prepared using banana leaf as well but it does not give the unique flavor of bay leaves.

This recipe is very simple and easy to make but getting fresh bay leaves is quite challenging. So in case you are not getting those bay leaves you can make this recipe using banaleaf. And yes, you can add some dry bay leaf while steaming, so that you get some fragrance and a little taste of bay leaf. Something is better than nothing right?

In Kerala, during February and March, you will find earthen pots and therali leaves all around the city marking the beginning of the Attukal Pongala festival.

During this season in Kerala, Therali appam is made to celebrate this occasion.

Therali Appam is a mouthwatering sweet made with a combination of rice flour, coconut, small banana, and jaggery. These four ingredients are combined and wrapped in aromatic therali leaves also known as vayana leaves locally. Therali appam is loved by people of all ages.

This is one of those lost recipes in India about which the younger generation may not know. That is why I thought of making this recipe of therali appam as part of reviving Indian food culture and making the youngsters aware of it.

Serving Suggestion:

You can have a Therali appam just like that. But I have a unique way of eating it, with a special something to have along with it – Kadumanga Achar which is one of the famous Kerala Achar (pickles).

The combination of therali appam which is sweet and Kadumanga achar which is sour and salty is just awesome. If you ever get a chance do try this combo. I am sure you too would fall in love with this.

The soft, sweet therali appam makes for a satisfying breakfast or snack when served with a glass of cold milk.

Storage Suggestion:

It is best to consume Therali Appam for 2-3 days only. But if you want to store it for a week in a refrigerator then you can serve it as it is. You can reheat in the oven or a steamer.

Basic Ingredients Used to Make this Recipe:

Rice Flour: Choose fresh, fine rice flour that is free from lumps. Coarse flour can make the appams hard.

Jaggery: Jaggery adds sweetness, texture, and flavor to the appams. Use good quality jaggery that melts easily for the best results. Avoid jaggery that is very hard or has impurities.

Banana: For this recipe, I have used a small, ripe banana which binds the ingredients well. If small bananas are unavailable, robusta bananas can also be substituted. The sweetness and texture of small bananas are ideal for this dish.

Coconut: Grated coconut adds richness and crunch to the appams. Use freshly grated coconut for maximum flavor.

Bay Leaf: The bay leaves, or vazhana ela in Malayalam, add essential flavor when the appams are rolled in them. The leaves have a distinctive smell which brings in a very unique taste in the appam. Steaming the leaves makes your house aromatic.

If you don’t have bay leaves you can use banana leaves. Since I am in Banglore, I don’t get them here, so whenever my In-laws visit Kerala they bring some leaves which I then clean, dry, and store in the fridge in a bag, These leaves stay fresh for more than 15 days if stored properly.

Ingredients

  • 1 cup Roasted Rice flour
  • 1 cup Jaggery Powder
  • 1 Banana Small or robusta (well ripened)
  • 1 cup Grated Coconut
  • 8-9 nos Fresh Bay Leaves

Instructions

  • Wash Bay Leaves to remove any dirt and wipe with a clean cloth. Set aside.

  • Mix Rice flour, Coconut, Banana, powdered Jaggery to make the dough (The batter should be little smoother than that of Chapati dough consistency)

  • Take a handful of batter and make a cylinder shape as per the bay leaf and put the batter in a side of bay leaf and close it from the smaller side.

  • Place a similar cylindrical batter on the top of it and close the bay leaf with its stem.

  • Repeat the procedure with the remaining batter.

  • Place all the prepared therali in a steamer.

  • Steam it for about 30 minutes.

  • Once done take it out in a plate and let it cool down.

Notes

You can sprinkle water if needed while mixing the dough.
Alternatively, we can make cone with bay leaf and fill the batter inside.
It can be made in Idli stand as well.

You can use Jaggery powder, but the flavor may slightly change. Brown sugar does not provide the same flavor as jaggery.

Is freshly grated coconut important for this recipe?

Yes, freshly grated coconut gives the maximum flavor and texture. You can use dried or frozen coconut but you won’t get the same results.

Can I use regular bananas instead of small bananas?
