Ingredients

  • 24 2-inch won ton wrappers
  • 2 low fat Sausage links, casing removed
  • 1 cup marinara sauce
  • 1 cup low fat cottage cheese
  • 2 tbsp parmesan cheese
  • ½ cup low fat mozzarella cheese, sherred
  • 2 tbsp chopped basil leaves
  • 12 Low fat pepperonis
  • 2 tbsp diced green bell peppers
  • 1 tbsp dried origano
  • cooking spray

Instructions

  • Preheat the oven to 375 degrees F.

  • Lightly oil a standard 12 cup muffin tin or you can coat it with a nonstick spray.

  • Add the Italian Sausage to the pan and cook it until it is brown. This will take about 3-5 minutes. Make sure the sausage is crumbled as it cooks. Drain off any excess fat and stir in the marinara sauce.

  • Add the parmesan cheese and cottage cheese to a small sized mixing bowl and mix until they are combined well.

  • Place the wonton wrappers into each of the 12 muffin tins, pressing each one carefully to ensure there is an opening in the center. Fill in each cup with 1 tablespoon of cottage cheese. Top it with 1 tablespoon of marinara sauce, sausage, pepperonies, green bell peppers and 1 tablespoon of mozzarella cheese.

  • Put this into an oven and bake for 10-12 minutes or until the cheese has melted and the wonton wrappers have turned golden brown.
